Stefano Pescarmona makes tiny quantities of Lambrusco on his farm in the Enza valley of Emilia-Romagna, in addition to teaching biodynamics at the University of Gastronomic Sciences in Polenzo (he was Ellen's teacher!). His grape growing and cellar practices are super simple and hands on, and the TLC shows in the resulting wines. This one was made from 60 year old vines of lambrusco maestri, farmed biodynamically of course. It was fermented naturally in stainless and bottled with a bit of leftover must to kick-start a second fermentation. No sulfur was added, nor was it disgorged. The fruit is dark and a little grapey, with a smoky, spicy, leathery edge and a bit of firm tannin, which is cleaned up very nicely by the frothy bubbles!
