All the nice stuff about white Burgundy and natural wine in one delicious package, with spicy pear skins, frisky acidity, waxy richness, and stones.

Mâcon-Villages, Burgundy, France

Chris Santini is a young American who has been working in Burgundy's wine biz for a while, and in recent years he's been making his own fun fresh wines as a micro-négociant from vines in different parts of the region. This one comes from organically farmed chardonnay vines in the Mâconnais. It was made very simply in a mix of enamel tanks and old barrels, with wild yeasts and a minimal amount of added sulfur. It marries much of what's great about white Burgundy - a lively push and pull between richness and zingy acidity, stoniness - with the effortless drinkability and openness of natural-ish wine.
